Spicy Tomato and Bean Stew

  • ¾ cup lentils
  • 2 cans whole peeled tomatoes
  • 1 can kidney beans
  • 1 can garbanzo beans
  • 1 tsp. dark chili powder
  • 1 tsp. paprika
  • 1 tbs. dill
  • 1 tsp. black pepper
  • Dried basil leaves
  • Sea salt
  1. In a small pot, cook the lentils in 1 cup water until soft or until water evaporates, about 10 minutes. Set aside.
  2. In a large pot, bring the peeled tomatoes to a boil, about 5 minutes.
  3. Add the kidney and garbanzo beans after rinsing. Cook for an additional 5 minutes.
  4. Add all the spices and mix well. (You can add the basil and sea salt to your liking).
  5. Pour the lentils into the mixture and allow to simmer for 10 minutes, stirring occasionally.
  6. Let cool and serve or store.
